Born and raised in Iowa, Jackie Pedersen developed an interest in nutrition while she was a member of the Coe College Varsity Women’s Tennis Team. This interest ultimately inspired her to transfer to Iowa State University, where she graduated summa cum laude with a Bachelor of Science degree in Dietetics. Her favorite academic semester was spent living with a host family in Florence, Italy, while studying abroad and completing coursework in nutrition, culinary arts, and the Italian language. Jackie completed her dietetic internship at OSF Saint Francis Medical Center in Peoria, Illinois, with an emphasis in community nutrition. As a registered dietitian, Jackie has a love for teaching, and is excited to be a part of the CHEF team.
