  • 2 cups shredded green cabbage
  • ¼ cup finely sliced red onion
  • juice from 1 lime, enough to make 2 Tablespoons
  • juice from 1 orange, enough to make 2 Tablespoons
  • 1 teaspoon apple cider vinegar
  • ¼ cup chopped cilantro
  • 1 jalapeno, seeded, and finely sliced
  • ¼ teaspoon salt
  • freshly ground black pepper, to taste

 

DIRECTIONS

  1. Place cabbage in colander and season with salt. Let sit for 10 minutes until the cabbage starts to release water. Gently press to remove excess liquid.
  2. Place the drained cabbage into a large bowl. Add the red onion, vinegar, lime and orange juice, cilantro and jalapeno. Season with salt and pepper.
