Ratatouille- A Celebration of Veggies

  • 2 Tablespoon extra-virgin olive oil
  • ½ small white onion, chopped
  • 2 cloves garlic, finely chopped
  • ½ red bell pepper, chopped
  • 1 small eggplant, chopped
  • 1 small zucchini, chopped
  • 1 cup chopped mushrooms
  • 2-3 Roma tomatoes, chopped
  • Salt and pepper
  • Handful of fresh basil and parsley, chopped

 

DIRECTIONS

  1. Heat a large pot over medium heat. Add oil and then add the onion. Sauté until onion is translucent, about 5 minutes. Add the garlic and sauté another minute.
  2. Turn the heat to medium-low. Add the vegetables in the following sequence: peppers, eggplant, zucchini, mushrooms and tomatoes. Cook each vegetable about 2-3 minutes each before adding the next.
  3. Turn heat to low and allow the vegetable to simmer another 5 minutes. Season with salt and pepper and top with fresh herbs.

Serve the ratatouille as a side dish or as a topping for pizza. You can also use as a filling for grilled cheese sandwiches or quesadillas.
