  • 2 pieces of cucumber, cut into matchsticks
  • 2 pieces of carrot, cut into matchsticks
  • 1 slice whole wheat bread
  • 1 ½ Tablespoons low-fat cream cheese, softened
  • ¾ Tablespoons low-fat plain Greek yogurt
  • ½ green onion, finely chopped (optional)

 

DIRECTIONS

  1. In a small bowl, combine the cream cheese and Greek yogurt. Mix well. Add the green onion, if using and stir well.
  2. Slice the crust off the slice of bread. Place the bread in between two pieces of wax paper. Use a rolling pin to roll over the slice of bread until thinned out.
  3. Spread some of the cream cheese mixture onto the bread. Place the cucumber and carrot sticks at the bottom of the slice of bread. Let the ends hang over the edges. Roll up the bread, pressing gently to seal.
  4. Slice into 4 equal parts and enjoy!
