  • 8 baked corn tortillas (tostadas)
  • 1 cup non-fat refried beans
  • 4 large Romaine lettuce leaves
  • 2 tomatoes
  • ¼ cup queso fresco
  • 1 large avocado
  • 1 lime

 

DIRECTIONS

  1.   Slice the avocado in half and remove the pit.  Scoop out the flesh into a bowl and smash lightly. Slice the lime in half and drizzle the avocado with juice.
  2. Wash and dry the Romaine lettuce.  Slice into fine strips. Chop the tomato into small pieces, and crumble the queso fresco. Place each ingredient into separate bowls.
  3. Place two tostada shells on each of four plates. Spread about 2 Tablespoons of beans on each one. Top each tostadas with equal amounts of lettuce, tomato, avocado, & cheese.
