Confetti Corn

This delicious Confetti Corn is a great way to show your child how vegetables are available in a variety of colors, shapes, and sizes.

Here’s what you’ll need to make Confetti Corn.

  • Corn: Corn is a whole grain and starchy vegetable. You can use fresh, frozen, or canned corn in this recipe. Canned and frozen varieties can be just as healthy as fresh options and may be easier to find in the grocery store. Just look for options with no added salt, sugar, or oils by checking the ingredients list on the back of the package.
  • Peppers: This recipe includes sweet red bell pepper and green poblano peppers. Poblano peppers can be a little spicy so if you have any young children in the family, you may want to deseed the pepper before chopping.
  • Carrots: Carrots and other orange produce contain vitamin A which helps you see better at night.
  • Fresh Herbs: Herbs are a great way to add a boost of flavor to recipes without adding extra salt, sugar, or fats. This recipe uses green onions and fresh cilantro.

Confetti Corn

Ingredients

  • 2 cups cooked corn kernels
  • ½ small poblano pepper, finely chopped
  • ½ red bell pepper, finely chopped
  • 1 large carrot, grated
  • 2 green onions, thinly sliced
  • 1 handful cilantro, chopped
  • ½ teaspoon ground cumin, or to taste
  • Juice of 1 lime
  • ½ Tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • 4-8 romaine lettuce leaves

Directions

  1. If using canned corn, rinse and drain. If using frozen, allow to thaw under cold running water.
  2. In a large bowl, combine the corn, poblano, red bell pepper, carrot, green onion, and cilantro. Stir to combine.
  3. In a small bowl, combine the cumin, lime juice, and oil. Whisk to combine and then pour over the corn mixture. Season with salt, stir, and then let sit for 15 minutes before serving.
  4. Serve in romaine lettuce cups.
