Colorful Black Bean Salsa

  • 1 ½ cup cooked black beans
  • 2 tablespoons chopped red onion
  • 2 tablespoons chopped red bell pepper
  • 2 tablespoons chopped green bell pepper
  • Small handful of cilantro
  • 1 lime
  • 1 teaspoon ground cumin
  • ½ tablespoon extra-virgin olive oil
  • Boston Bibb lettuce, for serving

DIRECTIONS

  1. If using canned black beans, rinse and drain. Measure out 1 ½ cup of each and place into a large bowl.
  2. Add the red onion, red and green bell peppers. Gently chop the cilantro and add to the bowl.
  3. Slice the lime in half and squeeze the juice into the bowl.
  4. Season with cumin and add the olive oil. Stir well. Let the salad sit for half an hour before eating.

COOKING TIP/SUGGESTION

When using canned foods, always rinse and drain to get rid of any extra sodium, sugar, or other preservatives.
