Strawberry Spinach Salad

  • 4 cups baby spinach or mixed greens
  • 1 cup sliced strawberries
  • ¼ cup walnuts, chopped
  • ¼ cup queso fresco, crumbled
  • 1 Tablespoon extra virgin olive oil
  • 1 ½ teaspoons balsamic vinegar

 

DIRECTIONS

  1. Prepare salad ingredients and place in individual bowls until serving.
  2. Place the baby spinach into a large salad bowl.
  3. Place the strawberries, walnuts, and queso fresco on top.
  4. In a sealable jar, combine the olive oil and balsamic vinegar. Seal and shake vigorously to combine.
  5. Pour the vinaigrette over salad and toss lightly. Serve immediately.

COOKING TIP/SUGGESTION

Spinach and strawberries are both high in vitamin C. Eat at least five portions for fruits and veggies per day! Substitute other seasonal fruits for the strawberries. Sliced apples, pears, or peaches are delicious in salads.
