  • 1 large avocado
  • 2 tablespoons finely chopped or grated white onion
  • Pinch curry powder
  • 2 tablespoons finely chopped cilantro
  • Juice of 1/2-1 lime
  • 1/2 cup pomegranate seeds

 

DIRECTIONS

  1. Split the avocado in half, remove the seed, and scoop out the flesh into a large bowl. Add the avocado and mash lightly.
  2. Stir in the finely chopped onion, curry powder, and cilantro.
  3. Add enough lime juice to taste and stir gently.
  4. Gently stir in pomegranate seeds, leaving a few to scatter on top.
